First, wash and peel the potatoes then cut them into thin strips, about 1/4 to 1/2 inch thick. You can also cut them thicker if you prefer steak fries. Soak the potato strips in cold water for 30 minutes to remove excess starch. This will help make the fries crispy. After soaking, drain the potatoes and pat them dry with paper towels. Next heat the oil in a deep fryer or a large pot to about 350-375°F (175-190°C). Carefully add the potato strips to the hot oil in batches, making sure not to overcrowd the fryer or pot. Fry the potatoes for about 3-5 minutes, or until they begin to soften. Then use a slotted spoon or tongs to remove the fries from the oil and transfer them to a wire rack lined with a paper towel or plate to drain excess oil. Ensure that the oil is still hot return the fries to oil and fry until they are golden brown and crispy. Remove the fries from the oil and transfer them to a wire rack lined with a paper towel or plate to drain excess oil. While the fries are still hot season with salt, garnish, and then serve your homemade french fries immediately with your favorite dipping sauce, or enjoy them plain!
