What you need

jalapeno
vegetable oil

cup full fat milk
tsp vanilla extract

tsp iodized salt
tsp baking powder
cup granulated cane sugar

cup fine cornmeal

cup all purpose flour
Instructions
In a large mixing bowl, combine the flour, cornmeal, sugar, salt, baking powder, cheese, and then add jalapeño. In a separate bowl, mix the water or milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring to form a soft dough. You may need to adjust the water slightly to get the right consistency. Now, divide the dough into small portions and roll them into elongated shapes, resembling fingers. Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully slide the festival fingers into the hot oil. Fry until they are golden brown and crispy, turning occasionally, about 5-7 minutes. Remove the festivals and drain them on paper towels or a cooling rack. Serve your Jamaican festivals warm with your favorite protein sides.
